Christopher, then took me on a journey of his school days. Christopher attended high school at Knox College in Cristiana, another high elevation point, in the parish of Manchester, located between Mandeville and his home town – Coleyville. Knox College is a premier Presbyterian school in central Jamaica. In its formative years, Knox catered to the gentry. He recalled that things were much the same during his time there in the early 1980s, albeit many of the gentry class were at times barely able to make ends meet. At Knox, Christopher had earned the reputation as the defender of the bullied and the ridiculed. One of his best friends happened to wear both hats and another was the bully. This often meant that Christopher had to step in between his feuding friends to avert any potential calamities.
Soon it was time for him to leave home for the very first time to study Agronomy at the St. Augustine Campus of the University of the West Indies in the twin island republic of Trinidad and Tobago.
Oil rich Trinidad and Tobago is located just north of Venezuela. Trinidad and Tobago (Trinidad, Trini or T&T) has gifted the world with the sweet melodious sounds of the steel drums, the steel orchestra, soca and calypso – the beat of the Eastern Caribbean. While studying for his Agronomy degree in Trinidad, he was once again fortunate to be in the company of some accomplished cooks. It was also in Trinidad where he developed his cooking skills. As it turned out, those countless days spent around his mommy in the kitchen had equipped him with a keen sense of how to combine herbs and spices to create that delicate matrimony of flavours to bring out the perfect tastes of every dish.
He also had fond memories of some of the dishes of Trinidad which have left a potpourri of wholesome goodness which he still craves for. Some of his favourites were, “Pickled Pig Feet – called Souse, Blood Pudding, Curried Goat with Roti – Trini curry has a tad bit more cumin than Jamaican, Dahl Roti, Bust-up-shirt (shirt is pronounced shut), Gaudy Beans and Doubles. Doubles was generally not a favourite among Jamaicans but Christopher was no ordinary Jamaican. A typical Sunday would entail Christopher and one of his friends – a Belizan going to their special Doubles food stall in the Tunapuna Market. Doubles is a dish which consists of stewed peas with curried chick peas, and mildly pickled cucumbers served between two flat bread. This hearty treat always hit the right spot and was as filling as it was delicious. He was quick to warn however that the Trinis eat a special (cat / mudfish) called cascadura which unless you want to return to your home country, you should avoid – especially if it is cooked by a local woman with whom you are romantically involved.
After completing his studies in T&T, Christopher returned to his hometown. His father needing to focus on his bakery gave Christopher a 7-acre plot to launch his coffee farming project. The project was so successful that eventually Christopher was able to transition most of the family’s 80+ acres of banana farming into coffee. Along the way to this transition, Christopher picked up the coveted Champion Junior Farmer crown. He soon faced steep challenges procuring coffee seedlings from the then Coffee Industry Board (CIB – which he would go on to head) to expand his farm and meet the demands of the lucrative coffee market. Coupled with being as astute an entrepreneur as he was a farmer, had a good freshwater source and the scientific skillset to produce seedlings, Christopher soon went into producing coffee seedlings because these were very difficult to find. In no time, word got around and he was soon one of the main sources for coffee seedlings. He was ably assisted by his sister who would later go on to teach agricultural sciences at Knox College. In time, his sister would eventually go on to major in medicine.
Things were going great. Coffee and coffee seedlings were now the main income generators. This was buttressed by the lucrative demand of Jamaican coffee by Japan. Things however came to a crashing halt with the Japanese economic bubble burst. Between 1994 and 1996, coffee sales plunged by over 30%. Eventually, their operations were no longer sustainable and they eventually had to wind-up the farm. After selling off the farm, he used the cash received to partner with one of his friends (the one whom he had often defended back in high school) in a tyres and batteries import venture. They used to import automobile tyres and batteries from Indonesia and Thailand and distribute them to local auto parts dealers in Jamaica. Once again, things were going well. This was until the Jamaican financial market crash – affectionately called FINSAC. Once again, the good fortunes were short-lived as many of their clients’ businesses went belly-up and the debts had to be written off. Christopher knew the time had come for him to exit this venture.

また、彼はトリニダードの料理の中でも、今でも食べたくなるような健康的な美味しさのポプリを残しているものがあるとのことで、懐かしい思い出を語りました。彼のお気に入りは「豚足の煮込み（Souse）」、「ブラッドプディング（Blood Pudding）」、「山羊のロティカレー（Trini curried Goat with Roti）」、「ダールロティ（Dahl Roti）」、「バストアップシャツ（Bust-up-Shirt）」、「ゴーディビーンズ（Gaudy Beans）」、「ダブルス（Doubles）」などです。ダブルスは一般的にジャマイカ人の間では好まれていませんでしたが、クリストファーは普通のジャマイカ人ではありませんでした。典型的な日曜日、クリストファーは友人の一人であるベリザンと一緒にトゥナプナ・マーケットにあるダブルス（Doubles）の屋台に通っていました。ダブルスとは、エンドウ豆の煮込みにカレー風味のヒヨコエンドウとマイルドに漬け込んだキュウリを2枚の平たいパンの間に挟んだ料理です。この心のこもったご馳走は、常に適切な場所にヒットし、それがおいしいのと同じくらい満たされていました。しかし、トリニダード人はクリストファーに一つだけ警告しました。昔の言い伝えで、トリニダード人女性でかつあなたの恋人が作るカスカドゥーラと呼ばれるナマズ科の魚料理を食べると一生トリニダードに住み続け母国に帰れなくなる、と。
T&Tでの勉強を終えたクリストファーは、故郷に戻りました。ベーカリーに専念する必要があった父親は、クリストファーに7エーカーの土地を与え、コーヒー栽培プロジェクトを開始しました。このプロジェクトは大成功を収め、クリストファーは家族が所有する80エーカー以上のバナナ畑のほとんどをコーヒー畑に移行させることができました。この移行の過程で、クリストファーはチャンピオンジュニアファーマーの栄冠を手にしました。彼はすぐに、農場を拡大し、有利なコーヒー市場の需要を満たすために、当時のコーヒー産業公社（CIB）からコーヒーの苗を調達するという急な試練に直面しました。農家であると同時に起業家でもあるクリストファーは、優れた淡水の水源を持ち、苗木を生産する科学的なスキルを持っていたため、すぐにコーヒーの苗木の生産に乗り出しました。すぐに噂が広まり、彼はコーヒー苗の主要な供給源の一つとなりました。彼は後にノックス大学で農業科学を教えるために行くことになる彼の妹によっても助けられました。彼の妹は最終的に農業ではなく医学の道に進むことになります。
物事は順調に進んでいました。コーヒーとコーヒー苗が主な収入源となっていました。これは日本によるジャマイカコーヒーの有利な需要に支えられていました。しかし、日本のバブルが崩壊したことで事態は一転しました。1994年から1996年にかけて、コーヒーの売り上げは30％以上も落ち込んだのです。最終的に彼らの経営はもはや持続可能なものではなく、農園を閉鎖せざるを得なくなってしまいました。農園を売却した後、彼はその資金を使って、高校時代の友人（いじめられっ子でクリストファーがよく助けていた友人）とタイヤやバッテリーの輸入事業を始めました。インドネシアやタイから自動車用タイヤやバッテリーを輸入し、ジャマイカの自動車部品ディーラーに卸していました。再び、物事は順調に進みました。これはジャマイカの金融市場の暴落（愛称FINSAC）までのことでした。多くの顧客のビジネスが破綻し、負債を帳消しにしなければならなくなったため、再び幸運は短命に終わってしまいました。クリストファーはこの事業から撤退する時が来たことを知っていました。
