Julius is a senior manager of a small hotel chain owned by a Malaysian Palm Oil group which operates 12 hotels and are now in their 20th year in the hotel industry. The hotels operate under a licencing agreement with the Marriott Group. He is truly the man who was blessed with a Golden Voice. He can sing the Physics textbook. He is the epitome of positive chi. He does not subscribe to the notion that he is owed anything by anyone. He believes you can be all you want to be if you believe in yourself, and if you believe no one owes you anything.<\/p>\n<p>So what was life like for Julius in his formative years? Who is this giant amongst us? Julius was born and bred in Waterhouse, located in Kingston 11, Jamaica. In the 1970s and 80s, Waterhouse was a torn community. Rival political factions dominated different parts of his beloved hometown. This resulted in constant violent clashes between warring factions. His family bond was very strong and resolute with both of his parents being fully integral in steering him along the right path. His parents were determined to give him a better life.<br \/>\nTo paint a little picture of Julius\u2019s hometown, Waterhouse is a typical inner city community. Waterhouse is also the birthplace of Olympic and World Championship multiple gold medal winner \u2013 Shelly-Ann Fraser-Pryce, OD (aka the Pocket Rocket because at 152 cm she is super-fast). [OD \u2013 the Order of Distinction is a national award given to only a few Jamaican or citizens of other countries who have made significant contributions to Jamaica]. In 2008, she became the first woman from the Caribbean to win the coveted 100m gold at any Olympics.<\/p>\n<p>Like the famous Trench Town, Waterhouse has produced many of Jamaica\u2019s world renowned singers, deejays and musicians. It is also home to one of Jamaica\u2019s pioneering sound systems and recording studio \u2013 King Jammys \u2013 which not only gave birth to Grammy awards winning artists (such as Shabba Ranks) but has cultivated, produced, recorded and distributed seminal works which have left indelible marks on the vernaculars of the rich and dynamic soul sounds of Jamaica\u2019s musical crooners. [Trench Town is renowned as the birthplace of Ska, Rocksteady, Reggae, Deejaying, Dubbing, Dancehall, American RAP music and Sir Coxsone\u2019s Downbeat Sound System. It is the place which launched Bob Marley, Bunny Wailer, Peter Tosh, Jimmy Cliff, Dennis Brown, Abyssinians, U-Roy, Coxsone Dodd\u2019s \u2013 Studio One \u2013 \u201cJamaica\u2019s Motown\u201d, Lee \u201cScratch\u201d Perry OD and many of Jamaica\u2019s great Reggae musicians careers].<\/p>\n<p>His parents \u2013 wanting to give him a fighting chance in life \u2013 started him off on a sound educational footing. They knew that a solid education, a sound mind set, and a strong family unit were key to helping him rise from the preconceived notion that those born in the inner city are condemned to the inner city. This was against the backdrop that he was from a family which was blessed with natural signing talents from his mother to his uncles. Each of whom were in their own rights acclaimed singers. Each of whom had no formal music training. He was born with the \u201cGolden Microphone.\u201d<\/p>\n<\/div>\n<div &#8220;\u9ec4\u91d1\u306e\u30de\u30a4\u30af&#8221;\u3092\u6301\u3063\u3066\u751f\u307e\u308c\u307e\u3057\u305f\u3002<\/p>\n<\/div>\n<\/div>\n<p style=\"background-color: #f3b4d2; padding: 1%; class=\"eng\">His parents had him enrolled in Half-Way Tree Primary where he completed his elementary school education. But perhaps even more important however were the guiding principles his father had inculcated in him throughout his early upbringings. These salient words still reverberate in his every endeavours today \u2013 \u201cNo one owes you anything.\u201d He matriculated to Kingston Technical High School (KT \u2013 for short). While attending KT at the time, being your typical teenage high school boy from the inner city, Julius\u2019s vision was to get a decent (white collar) job, start a family, get a house, get away from the inner city and life goes on.<\/p>\n<p>Little did he know that life had other expectations of him. While at KT, he joined the drama club. It was while performing at one of the JCDC\u2019s (Jamaica Cultural Development Commission \u2013 an agency of the Jamaica Government Ministry of Youth and Culture which was established in 1963 to foster and preserve Jamaica visual and performing arts) events that he was first noticed by Cathy Levy who invited him to join her theatre group called \u201cLittle People.\u201d Cathy Levy was crowned Miss Jamaica World in 1983. That same year she was the third runner-up at the 1983 Miss World Beauty Contest at the Royal Albert Hall, London. Her Miss World success landed her a role in the popular 1989 American suspense thriller filmed in Jamaica \u2013 \u2018Mighty Quinn\u2019 starring Denzel Washington along with Jamaican Hollywood star Sheryl Lee Ralph and the endearing Oliver Samuels \u2013 an icon of Jamaican theatre. Since then, she has devoted her time to her pet project of children\u2019s theatre which has produced several renowned Jamaican musical and theatrical icons.<\/p>\n<p>Fortuitously, round about the same time he was with Cathy Levy\u2019s theatre group one of his Dad\u2019s childhood girlfriends who was visiting from Norway where she was living at the time, heard his rendition and was moved beyond words. She quipped, \u201cJulius, why don\u2019t you sing opera?\u201d To which he curiously asked, \u201cWhat is that?\u201d This was way back in the good old days of vinyl records and cassette tapes of which TDK, and Maxwell were among the leading manufacturers. She promised she would send him some songs. True to her words after returning to her home in Norway, she posted some cassette tapes to him. One of which features the \u201cThree Tenors in Concert \u2013 Domingo, Carreras and Pavarotti (&#8216;Los Tres Tenores \u2013 Pl\u00e1cido Domingo, Josep Carreras i Luciano Pavarotti \u2013 en concierto&#8217;).\u201d This was the first one they had ever done. Naturally, with everything being sung in Italian or Latin, Julius did not understand a word they were singing. But\u2026 he loved their sound. He was hooked. He became a big fan.<\/p>\n<p>Blessed with the gift of music \u2013 soon Julius started copying the notes and tones of the three tenors all the while signing words he did not know the meaning of. He would listen the rich melodic powerful riveting pulsating melodies of the three tenors, then pause and then repeat. He singlehandedly taught himself to sing opera. At the Little People\u2019s theatrical productions \u2013 whilst they sang mostly Jamaican flavoured music \u2013 there was a gaping chasm in Julius\u2019s musical odyssey. These tones were not as fulfilling or enriching as the sounds of opera to Julius. This was an even greater anomaly given that he lived only a stone\u2019s throw away from King Jammys Studio and \u201cGrammy Kid\u201d \u2013 Beenie Man of Dancehall music fame. Neither Reggae nor Dancehall music appealed to him at the time. It was not until he had migrated from Jamaica that he developed an appreciation of Jamaica\u2019s music.<\/p>\n<p>Being a part of Little People was perhaps the most important and critical turning point in Julius\u2019s life. Little People was instrumental in giving him some formal training in acting, singing and dancing. It was here that he met people of different walks of life and different upbringings. People with different dreams and aspirations. People with different socio-economic means. People with upper St. Andrew addresses. Being a very social person \u2013 he started asking many of his theatrical colleagues about their parents\u2019 profession. This proved to be both an eye-opener and the creation of a new trajectory of his career pursuits. He discovered that there were many Jamaicans living very prosperous lives who were neither entertainers nor crime bosses. This was contrary to the examples which dominated the images of successful people from the ghetto \u2013 they were either involved in the entertainment industry or illicit activities. The latter of which was never an option or an afterthought given his firm upbringing. So, prior to this discovery, he had resigned himself to working 9 to 5 trying to make ends meet \u2013 just as his parents had done. He realised that one could work and make a good life for themselves and their respective families.<\/p>\n<p>This came at a very critical juncture in his life. He was about to matriculate into adulthood and the world of work. His high school days at KT were coming to an end. Fortunately or unfortunately Little People had disbanded. He then became a member of the Jamaica Musical Theatre Company. At the time he loved what they were doing but after the curtains were closed he used to feel somewhat out of place. He began asking himself what he was going to do to enrich himself in Jamaica. He was encouraged to apply to some schools in the USA. He then applied to two schools in the USA and one in Canada. On a visit to the US, he did not get the vibes be knew he needed. He realised the US was not his \u201ccup of tea.\u201d<\/p>\n<\/div>\n<div Conservatory of Music in Toronto to study opera. Although he was granted a scholarship, initially he would need an additional $30,000.00 per year to complete his studies. Needless to say, his parents could not afford this. Luckily he managed to get the required out of pocket amount reduced. That said, however, he still needed $13,000.00 annually to sustain himself. He then set about seeking sponsorship through a combination of sponsorship letters and a series of local performances. Through his initiatives, he was able to earn enough money to sustain him in Canada for the first two years of his study program with guarantees of full financial support for his four years of study. So, off to Canada he went.<\/p>\n<p>In his first year, he was exposed to true musical theatre. This he realised was his true long lost passion. So, although he can sing opera, musical theatre is what truly makes his \u201cheart sing and dance.\u201d<br \/>\nTowards the end of his second year at the Conservatory, the promised financial support from Jamaica had ended abruptly. Undaunted, determined to complete his degree, Julius decided to work and study fulltime. This took a heavy toll on his young mind. At the time, it was too much for him as a young person leaving home for the first time in a strange land all alone with no one to turn to for help. He had to defer. This started his sojourn in the hotel and hospitality industry.<\/p>\n<p>His first foray was at a hotel in Brampton. It was while waiting on a table and conversing with one of his guests who had stated that having just returned from a cruise holiday, he would never tip at a restaurant again. This lit a spark in Julius. He then applied for an opening on a large cruise liner and was hired. This was a joint decision with his wife who was studying in Paris at the time and they had not yet had any children.<\/p>\n<p>As a singer, he would always be singing. His colleagues loved his voice. Word got around to his manager. His manager asked him if he wanted to perform. Julius answered in the affirmative. He agreed to perform for the staff. It was a smash hit. He was offered his very own twice a week one hour shows on the cruise every week. These Monday and Wednesday shows were one of the best moments in his life. Keeping true to his promise, he returned home to Canada at the same time his wife had completed her studies in Paris. His first job back was as a security guard at the German Consulate in Toronto.<\/p>\n<p>It was a tough decision for him to leave the German Consulate. The experience was as fulfilling as it was warm. They even offered his security company extra pay for him to stay on. But he knew he could not pass up the opportunity which had presented itself. He was offered the Guest Services Manager position at one of the most prestigious hotels in Canada \u2013 the King Edward Hotel. He was the first black manager in the front office in the hotel\u2019s history. This was the very first time it had dawned on him that there were race issues in Canada. He confesses though, that even to this very day, he cannot honestly say that he has been a victim of racial discrimination. He worked there for over four years while studying fulltime.<\/p>\n<p>Julius needed a newer bigger challenge. He accepted a position at a car rental company with a paltry Net Promoter Score (NPS) of 15\/100. Julius took up the herculean challenge of leveraging his hotel and cruise ship customer service leadership experience to turn things around. He was promoted 3 months into the job to run Toronto Hertz Airport operations \u2013 managing over 100 staff after a frank conversation over lunch with his new manager. The company\u2019s NPS benchmark was 45\/100. His branch soon averaged 65 to 70 out of 100.<\/p>\n<p>This success was short lived. Hertz soon acquired Dollar-Thrifty. The President of Dollar-Thrifty was appointed President of Hertz Canada and soon made everyone redundant. So, he was unemployed but not down and out. He then started to observe that someone was constantly reviewing his LinkedIn page. He decided to contact her. As it turned out, she was very interested in having him work for her hotel. For him, he just wanted to take a break and just relax between jobs. But she persuaded him to come and have a conversation with her General Manager. The talk went on for almost 5 hours. This led to him accepting the front officer manager position at the 433 Room International Plaza Hotel spanning over 60,000 square feet of meeting space on the spot. He is still employed by the International Plaza Hotel. He took on the IT Manager\u2019s role 3 years ago along with his Front Office Manager\u2019s role when the then IT manager resigned.<\/p>\n<p>Julius has since obtained his Green Belt in Six Sigma. [Six Sigma is a system which helps organisations identify and reduce defects and improve performance, operation efficiencies, processes, profits, employees\u2019 morale, and improve customers\u2019 and stakeholders\u2019 experience. It was developed in 1986 by a Motorola engineer and adopted by Jack Welch at General Electric in 1995. There are six belts, rankings or certifications. The first is white belt. The third is green belt. The fourth is black belt. The final is champion]. He currently leads several major projects at work. He also manages risk management, parking and IT for the hotel. Additionally, he is currently pursuing his full Project Management Certification. This has been temporarily halted due to the COVID-19 nationwide lockdown. Julius credits his success to his sound upbringing, his super supportive wife who is from Trinidad, his two lovely daughters and his firm belief that \u2013 \u201cNo one owes you anything. Rather \u2013 you have to put in the hard work.\u201d He is also thankful that to date, he cannot claim that he has been a victim of discrimination.<\/p>\n<\/div>\n<div When I brought up the topic, Julius went \u201cOh my God.\u201d He admitted that like Clive and Vasiana in the interviews before his \u2013 Stew Peas with White Rice and Curried Goat were among two of his favourite dish, if not his two favourite dishes. To avoid getting into a debate about whose Stew Peas experience was the best, we quickly moved onto to talking about Julius\u2019s comfort food. Julius began to reminisce on what truly was his comfort food. This was his grandma\u2019s \u201cBrown Stewed Cow Skin with Broad Beans and White Rice.\u201d A close second was Tripe and Beans. (The tripe was cooked with either broad or butter beans).<\/p>\n<p>His parents did not often cook his comfort food \u201cBrown Stewed Cow Skin with Broad Beans.\u201d Maybe they were teaching him one of life\u2019s true lessons that you will not always get what you want in life even if this is the thing that gives you greatest comfort or perhaps he unknowingly might have let slip that grandma\u2019s \u201cBrown Stewed Cow Skin with Broad Beans\u201d was the bomb. To get his reward, to hit that comfort spot, to get that solace \u2013 he had to travel almost 40 km west of his high school or about 30 km west of his home. This became his Thursday ritual \u2013 without fail. Come rain, come storm, no matter what \u2013 Julius had to visit grandma for his weekly fix. Knowing that her grandson would make the trek without fail, she never disappointed him.<\/p>\n<p>Now, I bet most of you did not know that Jamaica once had a passenger rail service. Back then, the train was a much quicker and cheaper way to get to Spanish Town from Kingston. Do not be too hard on yourselves. Jamaica was one of the first countries in the world to get a railroad network outside the USA and England. Passenger railroad travel began in 1845 between Kingston and Spanish Town and ended in 1992. Many Jamaicans do not know about this service especially those who were born in the 1980s onwards. Julius however revelled in the train rides he would take on Thursdays from Kingston to Spanish Town (Jamaica\u2019s first capital before Kingston became the capital in 1872). When he got to Spanish Town he then had to catch a bus to get to his grandmother\u2019s place.<\/p>\n<p>He would race from KT on a Thursday afternoon to get to the rail station (terminal) located at the corner of West and Pechon Street in downtown Kingston. He knew if he missed his train it would have been a week of deep, deep regret. All along the journey, Julius salivated. He could picture his grandmother cooking his soul food. He could smell his grandma\u2019s \u201cBrown Stewed Cow Skin with Broad Beans\u201d wafting through the air in his imagination on the train. He could taste the delicately flavoured \u201cBrown Stewed Cow Skin with Broad Beans\u201d melting on his tongue like butter against the sun. It was celestial. It was heavenly. It was from a completely foreign constellation. A stellar constellation yet to be discovered because it is beyond our universe. Beyond our mortal world. His grandmother had him trapped. He was hooked.<\/p>\n<p>Cooking the perfect \u201cBrown Stewed Cow Skin with Broad Beans\u201d is more than an art. It is much greater than food science. It is as much a tradition that is passed on from generation to generation as it is a gift. His grandmother possessed a gift like no other. Her \u201cBrown Stewed Cow Skin with Broad Beans\u201d was so amazing\u2026 that all he could think about was for Thursday to come as quickly as it possibly could.<\/p>\n<p>His grandmother would get the freshest and best cow skin. She would scrape (remove) the inner linings and wash it well. Then burn the hair off over an open gas flame. She would then scape both the inside and outside of the cow skin a final time. (Prior to this she would wash and soak her broad beans to help it cook well, if she was using the dried beans instead of the canned beans). After that she would season the cow skin with escallion, onion, scotch bonnet pepper, thyme, pimento, salt and a dash of soy sauce. This would marinate for at least an hour for the cow skin to fully absorb the seasoning. When the flavours were fully marinated into the cow skin, it was ready for browning in coconut oil. This helped to caramelise the cow skin and in so doing gave it a rich potpourri of tantalisingly good taste. This was a very key step in cooking the perfect \u201cBrown Stewed Cow Skin with Broad Beans.\u201d<br \/>\nJulius and I then went off on a tangent to chit-chat about the simple lifestyle of the good old days. Back then, we would go to the corner shops to buy a quarter loaf of bread, a big gill of coconut oil (213 ml), a stick of butter, some chicken back wrapped in brown paper. A pound of flour, rice or cornmeal all wrapped in brown paper. Those days we recycled everything.<\/p>\n<p>After painstakingly removing the seasoning to brown (caramelise) each cut of the cow skin, grandma would then add them all back in the pot along with the marinate (that was used to season the cow skin) and the broad beans. The pot was then covered and the flame was reduced to allow for the cow skin to slow cook until it was very soft and tender. All along the sweet aroma from the pot would permeate the air. The flavours were as tempting as they were tantalising. Julius had to muster up all the will power he had to remain patiently until grandma bellowed dinner was ready. This was torture to the extreme. \u201cWhy did it have to take so long?\u201d \u2013 His inner thoughts would keep tugging at him. When dinner was final served, it was a stark reminder of why he was compelled to make his weekly Thursday sojourn all the way to Spanish Town when he could have easily gone home for Stew Peas \u2013 a Thursday staple in 99.99% of all Jamaican homes. Why?<\/p>\n<p>We then veered off topic once again. Apologies for the digression. We soon got back on the topic of Julius\u2019s soul food. Even to this very day, there is nothing like the slow life to Julius. He enjoys passing the day slowing in his backyard with some beer over the barbeque grill and you guessed it. Every now and then, he treats his taste buds to some home cooked \u201cBrown Stewed Cow Skin with Broad Beans\u201d and freshly steamed white rice. Julius and I then digressed once again to stew peas which he equally agrees is Jamaica\u2019s true soul food. In fact, back in 1992 the Jamaica Gleaner had declared Stew Peas as the national soul food of Jamaica.<\/p>\n<p>As it would have been remised of me, I tried to get Julius to do a rendition in our interview but he promised one better. Being a true professional he would not have \u2018buss a tune\u2019 [sing a song] without a proper rehearsal. But he was quick to add that no trip to Jamaica or to a Jamaican home or restaurant can be truly considered the real Jamaican experience until you have had a dish of gummy \u201cBrown Stewed Cow Skin with Broad Beans\u201d and freshly steamed white rice. This experience is beyond words. It will take you to another realm. Another time and space. It will take you to ecstasy.<\/p>\n<p>Towards the end of our delightfully pleasant conversation, Julius then let me in on a little secret. He told me had some cow skin in his refrigerator which he was planning to cook in the next few days. He had agreed to taking some photos of it. But in my follow-up talk with him, he admitted that he got so carried away at paying due respect to it, that he had completely forgot to take the photos.<\/p>\n<p>So when you visit Jamaica, you must ask for stew peas, but more importantly you must experience the real Jamaica comfort food. If you don\u2019t Julius \u2018ah guh vex wid mi bad\u2019 [will be very upset and disappointed with me]. \u2018Suh ask fi\u2019 [So ask for] \u201cBrown Stewed Cow Skin with Broad Beans\u201d and freshly steamed white rice, please. Admittedly, this is also my mother\u2019s comfort food she would make a mean stew but I would not dare clash with Julius over whose \u201cBrown Stewed Cow Skin with Broad Beans\u201d is tastier \u2013 his grandma\u2019s or my mother\u2019s.
