This is the ninth instalment in our \u201cFood I fondly remember\u201d interview series which is aimed at introducing Japanese to odds defying Jamaican and their Jamaican soul foods which many Japanese have never experienced but are really worth trying.<\/p>\n\n\n\n

Featured in this our ninth interview is Tafari Burns \u2013 a true son of the soil and a multi-tasker extraordinaire. Tafari is a man who wears many hats. Tafari hails from the heartthrob of Jamaica. (I am sure many Jamaicans will have a thing or two to say about this J). Tafari was born and bred on Chisholm Avenue in Kingston 13. (Geographically speaking, his home community is in southeast Saint Andrew just west of Kingston\u2019s south westernmost borders. Back in the heydays, Chisholm Avenue was a suburb of Kingston. <\/em>Chisholm Avenue is one of the longest roads connecting Waltham Park Road with Maxfield Avenue just south of Richmond Park. Maxfield Avenue is a key thoroughfare to Halfway Tree which is the capital of the Parish of Saint Andrew. Halfway Tree also happens to be where for many the real uptown Kingston begins. Geographically speaking however this honour belongs to Cross Roads to the east of Maxfield Avenue and south of Halfway Tree. This honour also belongs to the Richmond Park Community which was prized by many middle class Jamaicans.<\/p>\n\n\n\n

So who is Tafari? What was his formative years like? What is it that helped shape his call, taste and appreciation for fine Jamaican cuisine? Which of these delicious dishes truly makes his heart dance? Tafari opens up and takes us back in time to his early upbringings on Chisholm Avenue which was shared between his visits to the Bushy Park Community located on the westernmost edge of the old capital city of Jamaica \u2013 Spanish Town.<\/p>\n\n\n\n

Tafari opened up to share his amazing days growing up in Kingston 13. Although his parents had migrated to the United States of America in his formative years in search of a better life for him, they left him in the loving care of his paternal grandmother and aunts. They lived a very modest lifestyle which had an extremely rich food culture. Every so often, especially when he had extended breaks from school, he would go to Bushy Park to spend time with his maternal grandmother and his other relatives. These days were amazingly exciting. It was this rich mix of culture, especially in the culinary realm which helped deepen his passion for the delightful escapades he would experience when these carefully crafted soul foods prepared to exacting standards with very little tolerance for deviations from the mores would hit his palate. So mesmerised was Tafari by these indescribable feelings that he soon allowed his curiosity to get the better of him. And thus, began his experiments in the kitchen.On his visits to Bushy Park, he would help with the grating of the dried coconuts and sweet potatoes among other critical ingredients needed to make some of Jamaica\u2019s traditional sweets such as coconuts drops, grater cakes, and sweet potato pudding. He would take back what he had learnt to Kingston where he would experiment to the delight of his loving family in Kingston 13.<\/p>\n<\/div>\n\n\n\n

At one point, Tafari was very convinced that his real calling in life was pleasuring guests with specially created meals as a chef extraordinaire. But despite his love of the kitchen, owing to his flat feet, he could not stand for protracted periods \u2013 a requirement of working in the kitchen. Fortunately for Tafari he was always a very well-rounded person.<\/p>\n\n\n\n

Tafari is a proud alumni of Kingston College, which is arguably Jamaica\u2019s best all-boys high school. (I will draw the ire of many of our readers who will be quick to point out that their high school has a strong claim to that title. Kingston College, which is almost 100 years old, has two campuses. The junior campus which houses grades 7 to 9 is located on Melbourne Road which was once home to one of Jamaica\u2019s premier cricket clubs. And the main campus which houses grades 9 to 11 and grades 12 and 13 (sixth form) is situated at 2A North Street across from the historical Trinity Cathedral and Sabina Park, one of the finest cricket grounds the world over, a mere 200 meters away.<\/p>\n\n\n\n

Kingston College (KC) was founded by the then Anglican Lord Bishop of Jamaica \u2013 Percival Gibson with a solitary vision of providing boys of modest means who although academically gifted often had to cut short their dreams of a career and life changing high school education and ultimately a university experience. Through his singular dream, Bishop Gibson helped to mould many of Jamaica\u2019s top leaders spanning all fields and some of Jamaica\u2019s most significant sports personalities. To date Kingston College still boasts the enviable record of 14 consecutive Boys Athletics Championship Titles. (Vere Technical High School has replicated Kingston College\u2019s (KC\u2019s) achievement on the girls\u2019 side of the equation). With regards the match of academic wits, KC, has won the annual Schools Challenge Quiz competition more than any other school in the history of the competition. Tafari too tasted victory at KC as a member of the school\u2019s rugby team.<\/p>\n\n\n\n

For Tafari, KC was a God sent. KC was a gift from heaven. He recalls that during his Rousseau Primary School days, he had no knowledge of KC. In fact he remembers being attracted to Ardenne High School which is located further north of Halfway Tree on (Ardenne Road), because one of his neighbours was a student there. So, naturally, he had chosen Ardenne to pursue his high school studies. He did not choose KC. But as fate would have it, KC chose him. The rest \u2013 as the proverbial saying goes<\/em> \u2013 is history. Not only did he excel at KC academically, he was involved in sports and was a member of KC\u2019s Tourism Quiz team. He was also active in the Key Club and the Tourism Action Club of KC where he rose to the ranks of the President.<\/p>\n\n\n\n

He discovered his literary calling under the astute but caring guidance of the then principal and English Literature teacher Mr. Johnson who himself was a KC old boy and had except for primary school and college, spent his entire life at KC up to the time of his passing. For many who were guided by Mr. Johnson \u2013 affectionately called \u201cJohnno\u201d \u2013 he was arguably one of the best English and English Literature teachers of all times, if not the best ever.<\/p>\n\n\n\n

Most notable however, KC was the place where Tafari had truly developed and honed his cooking skills. Cooking naturally was not a part of any of the curriculum at KC \u2013 a grammar high school. By way of cooking, Tafari meant running boats. You might recall Bishop Burchell McPherson and Clive Myrie  sharing similar experiences in their respective home communities with their neighbours. For Tafari, this was by the cricket nursery on the Melbourne campus. His honourary role was making the \u201ccart wheels.\u201d \u201cCart wheels\u201d <\/em>are massively large boiled flour dumplings. These range in size from 12 to 15 cm in diameter and from 2 to 3 cm thick. Someone with a very hearty appetite can devour about 3 to 6 of these as a compliment to the main meat dish.<\/p>\n\n\n\n

While Tafari was honing his skills as a chief cook on the \u201cboat,\u201d<\/em> he had also developed a keen sense and liking of Jamaican Christmas fruit cake, coconut drops and many other traditional Jamaican pastries. One of the persons who had the most telling impact of Tafari\u2019s love for pastries was one of his enterprising neighbours of whose fruit cakes he could never get enough of. As he retells the story, his yearning for Ms. Gee\u2019s Christmas fruit cakes which she sold per slice far exceeded his grandmother\u2019s ability to finance his cravings. So not known for being the shy guy, he approached Ms. Gee for instructions on how to make her special fruit cakes. Naturally, this being her tradecraft, Ms. Gee only gave him the basic ingredients but no measurements or clear instructions. He was now over the moon. Soon he would be able to satisfy his cravings for eternity. There was one more hurdle which he had to clear. He needed help with financing the ingredients.<\/p>\n\n\n\n

He contacted his mom who sent him the funds he needed to get up and running. Needless to say, this joy was very short lived. The cake was somewhat very different to what he was accustomed to buying from Ms. Gee. He went back to her. She told him he needed to cut and fold. Back then, most baking was 100% by hand. Undaunted he would try repeatedly but the consistency was more like a pudding rather than a Christmas cake. Very few people could afford an electric cake mixer. He tried repeatedly until he got the knack for it. He would then make Christmas cakes which he would give to his relatives in the spirit of the Yuletide season. At the time, one of his aunts owned a bar in the area. She would serve slices to her patrons always telling them that it was the handy work of her nephew \u2013 Tafari. Her patrons were always as complementary as they were encouraging. But all the while for him making these Christmas fruit cakes was both of historical significance and his gift of love. During this time he was also receiving invaluable guidance in the kitchen from his grandmother \u2013 affectionately called Babes because of her beautiful light hazel brown eyes.<\/p>\n\n\n\n

While in high school at KC, Tafari suffered a personal tragedy. His father\u2019s passing was a thunderous punch to his gut. His mother, grandmother and his extended family members were instrumental in helping him to get over his loss. That said, the moment that resonated most with him was when he saw his then principal \u201cJohnno\u201d<\/em> and vice principal, Ms. Douglas at his father\u2019s thanksgiving service. His father passed away in the United States pretty close to when he was to sit his Caribbean Examination when he was 15 going on to 16 years old.<\/p>\n\n\n\n

For him, this was the thing that brought him to the full understanding and appreciation of what he kept hearing all his days at KC up to that point but could not comprehend \u2013 that KC is not just a high school, it is a family. The love he felt from his KC family starting from the headmaster was in many ways similar to his biological family. He truly felt the \u201cpurple blood\u201d <\/em>coursing through his veins. He had another family. And\u2026 It was very real.<\/p>\n<\/div>\n\n\n\n

Tafari matriculated to the University of Technology (UTech) in Papine for his first degree \u2013 a stone\u2019s throw away from the UWI and nestled at the foothills of the Blue Mountains \u2013 home to the world\u2019s best Jamaica Blue Mountain Coffee. While at UTech, Tafari married his love of poetry with his love of service and founded the UTech Poetry Club. He later studied at the University of the West Indies, Mona Campus in Kingston, Jamaica (UWI) for his Master\u2019s degree in Tourism Management. Although he did not secure a dorm room on Taylor Hall \u2013 the unofficial KC hall, he resided on the Rex Nettleford Hall. He soon became the block leader, represented his hall in sports and wowed both his male and female friends with his cooking prowess at the weekends. All the while Tafari kept honing his p\u00e2tissier skills.<\/p>\n\n\n\n

As was mentioned earlier, Tafari, a career civil servant (public officer) wears many hats. He is presently the Director of Cultural Economics and Business Initiatives at the Ministry of Culture, Gender, Entertainment & Sport, Jamaica<\/a>. Prior to his current position, he was formerly the Director of Entertainment Policy in the Ministry of Tourism & Entertainment. His portfolio included Entertainment Registry and Events Ratings. He was involved in cross agency projects involving the Ministry of Tourism and Entertainment. In his current portfolio, his department works closely with other governments to establish bi-lateral agreements. This framework allows for reciprocal benefits between the two signatory countries. These include but are not limited to events, cultural and skill exchange programs. His work has led to the development of skills exchange\u00a0 and economic development projects with the Mexican and Nigerian governments which have benefitted parts of downtown Kingston, the Maroon communities in the Blue and John Crow Mountains, the Rastafari communities and Port Royal (the town where the Disney epic \u2013 \u201cPirates of the Caribbean\u201d starring Johnny Depp story is based). Port Royal, now a Jamaican cruise pier, was once the pirates\u2019 capital of the world. It was once dubbed the wickedest and wealthiest city of the entire world before it was completely destroyed by one the largest earthquakes of all time.<\/p>\n\n\n\n

His foray into business was somewhat accidental. He had no interest in doing his baked products commercially until several years later in December 2016 to be more precise when a young lady approached him to buy one of her mother\u2019s Christmas cakes. When he told her that he too baked Christmas cakes she laughed mockingly at him. He then took in on as a challenge to bake and sell them online through his Facebook page. Soon after posting he was offering Christmas fruit cakes for sale, they were oversubscribed. His followers would ask him repeatedly when the next batch would be made available for sale. He started out tentatively baking only around select holidays. This was a strategic decision owing to his need to balance his family, work and his baked products business.The demand kept growing and so he decided to offer his baked products weekly. He now has his dedicated Instagram and Facebook shops aptly named \u201cCakes by Fari\u201d (pronounced fahri). He keeps a simple business model. Each week he introduces two or more items. He then invites orders. Based on the orders he receives, he then bakes to order on Fridays and his clients pick up their pastries on Saturdays. His pastry business has been enjoying steady growth through a combination of repeat patronage, new patrons through referrals and wholesalers who export his cakes and puddings worldwide..<\/p>\n<\/div>\n\n\n\n

For Tafari, the COVID-19 pandemic was a major turning point for him. It gave him the much needed time he desired to pen his first novel entitled \u201cChronicles of the Friendzone\u201d which is available on Amazon (https:\/\/www.amazon.com\/Chronicles-Friendzone-tale-modern-day-friendzone\/dp\/B08B7F586Z\/ref=sr_1_10?dchild=1&keywords=tafari+burns+friends+zone&qid=1601201538&sr=8-10<\/a>). The story evolved from a blog post he started based on his observation of someone who seemingly had a mad crush on one of his co-workers who did not reciprocate the same sentiments. He drew on his art skills to design the artwork, arrangement and everything to bring it to realisation.<\/p>\n\n\n\n

Right throughout our interview with Tafari on the very same day he had returned from his wedding anniversary getaway at a North Coast hotel in Montego Bay, Jamaica, he was bursting with desire to share his comfort foods, a main staple and a dessert of sorts. Tafari who has been to Japan as part of a visiting delegation of the Jamaican Government has been fortunate to have had a wide exposure to foods which have graced the plates of many people the world over. He was a vegan for a while. He relishes in cooking and baking. Cooking is a fine art whereas baking as he describes it is a precise science. For him, he holds dear the old adage that one\u2019s emotions always come out in their cooking. He believes that if you cook in a foul mood, that mood is manifestly reflected in the finished dish.<\/p>\n\n\n\n

One of his favourite non-Jamaican cuisines is Italian for its simplicity. It’s umami. The 4th<\/sup> dimension of taste. Similarly, there is one Jamaican staple which is undeniably heaven on earth for him when down to exacting standards. Rice and peas and banana fritters are two Jamaican staples which truly make Tafari heart dances.<\/p>\n\n\n\n

The Jamaican rice and peas is not simply an accompaniment to the main meat or vegetable dish, if one happens to be a vegetarian. For the rice and peas to truly do its job well, it must be done right. For Tafari, based on the teachings of his paternal grandmother with whom he lived in Kingston 13, the perfection begins with a trip to the largest and must visit Coronation Market located along Spanish Town Road smack in the middle of Kingston. The vibes, the energy, the rich history and diversity in the melting pot of Jamaicans of all strata and regions of Jamaica converging in this dynamic place. This is where you go to hand pick the freshest and best dried coconuts, kidney or gungo (pigeon) peas, thyme, scotch bonnet peppers, escallion (scallion), garlic and pimento for this pot of wholesome goodness. Rice and peas is unequivocally \u2013 the holy grail of Jamaican cuisine and the core mores of the traditional Jamaican Sunday dinner.<\/p>\n\n\n\n

Even to this very day whenever his relatives visit from the USA, they always demand that Tafari make their rice and peas the exact same way his grandmother Babes taught all of them to cook the true pot of rice and peas. Anything short of her method would be blasphemous. The peas are first washed and all floaters are removed. They are then allowed to soak in water overnight to help tenderise them. The following day, the coconuts are cracked and hulled. A big treat of cracking the coconuts is getting to drink the sweet coconut water. The coconut is then either: 1. grated by hand or 2. diced and then ground in a blender in water. The ground coconut with water solution is then squeezed through a very fine sieve (strainer) to extract the rich coconut milk.<\/p>\n\n\n\n

The water is then drained from the peas. The beans and the coconut milk with the seasoning (some people add a piece of ginger to the pot) is then allowed to cook until the peas are cooked and tender. The rice which has been picked and washed is then added to the coconut milk and peas pot. For some people the fork test is key. If the fork stands without falling, the liquid level is just right. This was Babes\u2019 preferred method. For Tafari, another measure is that the liquid level should be about an inch and a half (35 to 40 mm) above the level of the rice. The pot is then re-seasoned (some people do not believe this is necessary). The pot is cooked on high until it begins to boil. The flame is then lowered and some people place a grate or a sheet metal or zinc between the direct flame and the pot of rice and peas. Others hoist the pot. This is a method of putting the pot on a stand or two pieces of bricks to effectively reduce the direct heat going to the pot. This allows for the pot to cook slowly and prevent the rice and peas from burning. For Babes anyone who opened the pot while the rice is being steamed, is clueless in cooking rice and peas. (I think she is talking about me). To further help seal the pot and lock in the flavours of the rice and peas, Babes taught Tafari to wash the rice bag very well and then place it between the pot lid and the pot cover. Last ritual is that the rice pot should neither be stirred nor should the rice be served from the center of the pot. Rather, the rice and peas should be served from the side of the pot. Rice and peas, like any other Jamaican dishes have a richer most distinct flavour when cooked on a wood fire.<\/p>\n<\/div>\n\n\n\n

As someone with a deep appreciation of Jamaican sweet treats, Tafari has an immense appreciation of <\/p>\n\n\n\n

the classic banana fritters. When making banana fritters, Tafari is like Brother Anansi. The simple truth is because the caramelised aroma of the fritters batter searing in the pot of hot oil is too much for him to resist. By the time he is done frying the entire batch he usually would have already eaten almost a third of what he has fried. And by the time he serves them on the table he would help himself to more.<\/p>\n\n\n\n

Tafari prizes himself for making a very mean batch of banana fritters. Ideally, the bananas should be slightly over ripened and mashed with a fork or a potato masher in a large enough bowl. He then adds vanilla essence, cinnamon powder, a hint of nutmeg allspice, a pinch of salt, sugar, flour and water. Some almond essence, optional, also gives it an amazing punch. (He goes by Benjamin vanilla as opposed to the competing offers). Water (optional) is added gradually until it is of a pancake (hotcake) consistency. When the mix is ready, heat the pot of coconut oil (other vegetable or salad oil works equally well). Fry until both sides are golden brown and the inside is cooked. Serve hot.<\/p>\n\n\n\n
