Through her popular food blog, <a href=\"http:\/\/www.chefandsteward.com\">www.chefandsteward.com<\/a>, which was started over 10 years ago, Kari has truly whetted the appetite of global citizens of all walks of life the world over who keep clambering for more of her special recipes which has seen both her blog and media presence scale of operation and her market share growing exponentially year on year.<\/p>\n\n\n\n<p>Kari, who now resides in Aruba has been living outside Jamaica for thirteen years, has not lost her roots or her Jamaican identity. Kari was born and bred in St. Catherine while her mother traces her humble beginnings to a farming community named Mocho, Clarendon. Kari recalled that a lot of her childhood meals she enjoyed were cooked at home. Back then, fast food was frowned upon. Her parents instilled strict discipline and no eating was allowed on the road. The inescapable indulgence in the occasional Tastee patties with Juciful orange juice or Jamaica spiced bun with cheese were to only exceptions to the tabooed fast food.<\/p>\n\n\n\n<p>Back in the days, her father had a small farm on her paternal great grandparents in Mount Regale, St. Mary. This meant they would spend most weekends in the country \u2013 an escape from the hustle and bustle of St. Catherine where they lived and Kingston where she attended school. When setting out on these trips to the farm or on other road trips, her mother would often busy herself in the kitchen from around 4:00 AM to cook a feast which often included Rice and Peas and chicken to take with them on their journey. This escape was a throwback in time.<\/p>\n\n\n\n<p>These weekends were magical. She recalled how amazed she was at the knowledge her cousins had of nature and of edible plants. She also credits her culinary skills and passion to those formative years when her cousins would run mini-boats in corned beef cans.<\/p>\n\n\n\n<p>Back then, snacks were all almost 100% fresh and natural. Most of the snacks were picked fresh from the trees and devoured either in or under the tree. The others were home made and included coconut treats such as Toto Cake, Puddings, Coconut Drops and Gizzadas. Kari also went back to memory lane to salivate about snacking on the succulent \u201cHeirloom Tomatoes\u201d and cucumber salad with a dash of salt. Other memories which came running back to her memory included the arresting rich aroma of her grandfather\u2019s freshly roasted and brewed coffee which he would give them a sip of when no one was around. Naturally he grew his own coffee given that Mocho is situated in the prime \u201cHigh Mountain\u201d coffee growing region. The area is also known for its cocoa \u2013 the \u201cTrinitario\u201d varietal. In addition to the coffee being home grown, freshly roasted and freshly brewed \u2013 perhaps the added joy came from watching her grandfather using a traditional mortar and pestle to ground the roasted beans to the perfect size and consistency and enjoying that whiff of rich aroma permeating the air in a pleasantly intoxicating manner. A few years ago on a visit to a coffee shop in Texas, Kari was taken back in time with a brew of Vietnamese coffee.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-cocoon-blocks-column-right column-right\">\n<h3 column-left\">\n<p>Other childhood staples enjoyed during the holidays in the countryside included yams of all types \u2013 the most common ones were Renta, Lucie, Soft and Yellow yam. For many Jamaicans, Yellow Yam is the king of yams. Rice, being an imported staple, was reserved mostly for cooking the Sunday \u201cRice and Peas\u201d \u2013 a main mores in the Jamaican culinary heritage. More importantly, though was the fact that almost everything that was put on the plate or eaten as snacks were all from the land. This, Kari recalled, made those days spent in the countryside even the more precious. Everything was done with extra care. The food was well respected. Cooking was a slow and deliberate hours-long process.&nbsp;<\/p>\n\n\n\n<p>The other common protein sources would either be Shad, Pickled Red Herring or Dried Salted Cod and coconut oil was freshly handmade at home. Her grandparents had a \u201ckreng-kreng\u201d for preserving meat. The \u201cKreng-kreng\u201d is a kind of wired mesh which is hung over a stove fired by wood which is often placed outside or in a special smoke shack. The smoke infuses into the meat as it slowly cooks the meat hung from the \u201cKringle-kreng\u201d for hours and hours. Back then, everyone lived a very modest lifestyle. Everything was done in a very sustainable manner. The wood which came from the land would serve as fuel for cooking the food. While the food was being cooked in the pot on the wood fire, the smoke and its radiant heat would double as a slow cooker for the meat or whatever else was hung on the \u201cIrene-kremg.\u201d The resulting meat which requires little or no refrigeration is a rich pot-pourri kaleidoscope of mesmerising bursts of flavours provocatively tantalizing the taste buds endlessly.<\/p>\n\n\n\n<p>As much as Kari was into food from an early age, her real appreciation was realised during her stint living on Mary Seacole Hall on the University of the West Indies (UWI), Mona campus. During her stint, Kari had the honour of living and making lasting friendships with people from the rural parishes of Jamaica. These folks she recalled could cook very well and their dishes were filled with delightful flavoured dancing rhythmically in her mouth. This unofficial major was exactly what she had yearned for throughout her high school days at Campion College. Kari wanted very much to study Home Economics in addition to the other traditional subjects taught in \u201cgrammar schools\u201d such as Physics, Chemistry, Economics and the others. In the end, Kari settled for the Arts, Business subjects, Physics, Chemistry, Biology, Mathematics and Technical Drawing.<\/p>\n\n\n\n<p>Kari also sang in her school\u2019s choir. As fate would have it, her choir master, Mr. John Binns was also the school\u2019s guidance counsellor. Kari, like many teenagers her age, was at a crossroads. The decisions she made by way of choice of subjects to study would invariably have impacted her future career path. She was encouraged by Mr. Binns to take an aptitude test to help guide her decisions. The results revealed that Kari was well-suited to pursue either law or media, professionally. Harmed with this information, Kari studied A-Level History, Law, Literature and Sociology at EXED (Excelsior Community College). She eventually dropped Law because not only was it very voluminous, but by this time Kari had started to develop a burning fervour for the media. (It was around this moment in our interview when Elijah, Kari\u2019s little bundle of joy popped in to say &#8211; \u201cHi!\u201d. We chit-chatted a little bit before he went off to bed).<\/p>\n\n\n\n<p>Kari considered herself up to that point in her life to be less self-assured than many of her friends at the time. Little did Kari know that this shy personality was soon to be changed. She came across an advertisement inviting those with a drive, a passion, and a dream of being in media to audition for one of their coveted spots at the then Creative Production Training Centre (CPTC) \u2013 now the Media Training Institute (MTI). Kari, then a young and impressionable 16 year old teenager searching for her career identity braved the odds and moved out of her comfort zone. She auditioned for the vacant \u201cRapping\u201d slot and the rest as the saying goes was history. \u201cRappin\u2019\u201d was the longest running television programme in Jamaica for teens.<\/p>\n\n\n\n<p>Kari made the top 20 out of a field of over 200 aspirants in the first round of auditions. Eventually she would be one of a handful of those who made the top 20 to actually make it on TV. She soon joined the ranks of Simone Clarke-Cooper and Lisa Hanna, a member of parliament and former Miss World.. Kari soon came under the tutelage and mentorship of legends of Jamaica\u2019s theatre and television such as Wycliffe Bennett, Sonia Holman, Leonie Forbes, Erica Allen, Fae Ellington, and Alma Mock Yen. She feels honoured to have had the opportunity to sit at the feet of some of the most iconic foundational media and communication stalwarts in the Caribbean.<\/p>\n\n\n\n<p>Kari was well on her way as a member of the CPTC\u2019s Rapping personalities. She started earning at the age of 16 and had her first taste of opening her first joint bank account with her mother. She recalled her first ever interview on TV as a 16 year old with Cathy Gayle. She was a nervous wreck inside. But she credits the training she was given at the CPTC as her saving grace. At the CPTC, she was coached in \u201cvoice and speech\u201d articulation, enunciation, modulation, poise, posture, projection and the art of how to \u201coccupy space and have a presence\u201d for radio, TV and other media platforms.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-cocoon-blocks-column-right She was taught photography at age 16 before being introduced to other indoor and outdoor still and video photography skills. By the time Kari was 19, she had begun producing other popular shows on TV. She was the Production Assistant to Carey Robinson on \u201cHill and Gully Ride\u201d \u2013 a show which took its audience into the nook and crannies of Jamaica\u2019s hilly interiors and interview Jamaicans of every walk of live, and \u201cER\u201d \u2013 Entertainment Report, a show which kept its audience abreast with the latest happenings on the entertainment scene as the production assistant at age 16. Her first interview on ER was of a curator of one of Jamaica\u2019s museums, guided by Kathy Gayle, who helped her with the questions and produced the segment.<\/p>\n\n\n\n<p>After completing her studies at the UWI, Kari worked in various spheres of endeavour which led to her travelling and expatriating in countries regionally and as far away as in the Arab Emirates. Through all her travels though, Kari has always had a burning passion for food. She was also very quick to credit her entrepreneurial drive to both her parents. Her father, the holder of an MBA, was also a farmer and her mother was a fishmonger. Her mother operates one of if not the best seafood suppliers in Jamaica named Sweeney\u2019s. Sweeney is located along the Port Henderson Road in Portmore, St. Catherine has been a favourite among her regular patrons for decades. Perhaps one of the biggest reasons is her mom\u2019s attention to detail, great seafood, customer service,her own boss cooking skills and secret sauces (fish marinades). It is simply magic when it hits your palates. These skills coupled with both a hearty serving of entrepreneurship and food sense wired in her DNA have helped her gain a coveted following and with this&nbsp; interviews from some of the celebrated food writers. Last but not least, Kari also credits being now rooted in one location, as opposed to having lived in various countries in the past 10 years, has helped immensely in moving her business forward. She now attests to the wise saying of her grandmother &#8211; \u201ca rolling stone gathers no moss.\u201d Now with the stability of a single location, her business has begun soaring to new heights.<\/p>\n\n\n\n<p>For Kari, the resulting quarantine due to the COVID-19 brought her back to her roots. She began cultivating from the seeds of the&nbsp; fruits and vegetables she bought in the supermarket. Through her research and jogging her memory, she has a thriving home garden. column-left\">\n<p>Kari was a bit taken aback when I asked her to name me that one Jamaican dish from her childhood days which makes her heart dance more than any other. She quipped that there were many and it would be a bit of an injustice to single anyone out as she had very fond memories of the dishes she feasted upon when she was growing up. She spoke of her paternal grandmother who was an amazing cook and with whom she spent a lot of time. Sadly though, Kari\u2019s paternal grandmother recently predeceased her 10 children. Kari remembers that her grandmother\u2019s fried dumplings were like none other that she had ever eaten or even made herself until recently. The secret was in the way she had always done them. Except for one of her daughters, none of her other children have ever been able to perfect the fried dumplings quite the way her paternal grandmother used to make them.&nbsp;<\/p>\n\n\n\n<p>Based on Kari\u2019s knowledge of food preparation and food chemistry from her years of creating and blogging her own recipes, last year Kari decided to try and recapture the elements of her grandmother\u2019s fried dumplings. She mulled over the taste, texture and the golden brown appearance of her grandmother\u2019s fried dumplings to see how best she could recreate the magic. Eventually, she was able to formulate the recipe exactly the way her grandmother used to make them. When she felt certain she had perfected them, she got her mother on a video call to have her give her verdict. Needless to say, her mother was amazed at Kari\u2019s handiwork.<\/p>\n\n\n\n<p>Her grandmother would complement her fried dumplings with some saut\u00e9ed cabbage with Jamaican black mint sweetened with condensed milk for tea. This brought back those beautiful memories she had of her time in Mocho. Kari then spoke about her Mount Regale experience where they had a fresh spring running through their family\u2019s land. The bananas in particular were amazingly delicious. Kari opened up to share that she is a town girl with a country heart. In fact, she believes hers is more country biased. Her dream is to one day own a farm to satisfy that passion and connect with her inner soul while owning a townhouse for the enjoyment of the trapping of the city conveniences.<\/p>\n\n\n\n<p>Kari &#8211; a certified coach for the past 5 years &#8211; has now ventured into making her own cheeses, something she would like to give a more Caribbean accent. As one of the food blogging pioneers among people of colour, she has built some tight bonds with fellow bloggers over the years and have connected with chefs &#8211; particularly those of Jamaican heritage. Some of the chefs she had high praise for were Jacqueline Sinclair of Nyam and Trod, Andre Forbes, <a href=\"https:\/\/dp03265696.lolipop.jp\/npo\/mifood\/brown-stewed-turkey-neck\/\" target=\"_blank\" rel=\"noreferrer noopener\">Noel Cunningham<\/a> and several others who have been etching their unique and indelible marks on the Jamaican and global culinary spheres. Kari truly believes in celebrating the successes of her peers. She believes success begets success. Kari shared a little secret with me about her cooking book that she will be launching soon, hopefully by the end of the year. She also offers Caribbean cooking classes and her own spices which you can buy online. She also creates recipes for the industry, media, art and photography work for her many clients. One of her clients for sourcing authentic Jamaican spices is a company called \u201cHigh Noon Spice.\u201d Kari\u2019s father also has a honey farm in Jamaica.<\/p>\n\n\n\n<p>As I wrote in my closing statement to <a href=\"https:\/\/dp03265696.lolipop.jp\/npo\/mifood\/pickled-mackerel\/\" target=\"_blank\" rel=\"noreferrer noopener\">Fitz\u2019s article<\/a> a month ago, and being a massive lover of fried dumplings myself and as someone who is able to get around the kitchen, I can\u2019t wait to bite into some of Kari\u2019s carbon copy of her grandmother\u2019s \u201cFried Dumplings with Saut\u00e9ed Cabbage.\u201d<\/p>\n\n\n\n<p>If you are game for a real healthy serving of a truly authentic Jamaican breakfast feast, and if you are a foodie like Kari and I, a proper serving of authentic Jamaican countryside \u201cFried Dumplings with Saut\u00e9ed Cabbage\u201d is guaranteed to make your heart dance. It is equally as delicious with a hearty serving of farm fresh coffee or cocoa. I honestly believe like Kari who has a genuine appreciation for Jamaican cuisine but singled out her grandmother\u2019s \u201cFried Dumplings with Saut\u00e9ed Cabbage\u201d, you too will be hooked for life. You can never stop craving more. If possible you should visit Mocho and Mount Regale in Clarendon for the authentic experience Kari just cannot shake from her memory.&nbsp; Kari also believes you should try it with some \u201cboiled soft green bananas\u201d from Mount Regale.
